Iced Dubai Mocha

Inspired by the viral Dubai chocolate trend — this is the drink that stops people in their tracks.
Zest Specialty Coffee's Corcovado concentrate and rich Grand Ridge chocolate poured over
ice, crowned with a luscious layer of pistachio whipped cream. The signature green-over
mocha gradient through the clear can is pure luxury.

INGREDIENTS
· Zest Specialty Coffee — Corcovado
Concentrate
· Grand Ridge Chocolate powder
· Pistachio whipped cream
· Ice


PREPARATION

1. Mix Grand Ridge Chocolate powder
with a small amount of hot water to
form a smooth paste.
2. Fill a chilled clear PET can with ice.
3. Pour the Corcovado coffee concentrate
over the ice.
4. Add the chocolate paste and stir gently
to combine with the coffee.
5. Whip cream with pistachio flavouring
until thick and spoonable.
6. Spoon pistachio cream generously over
the top. Seal and serve immediately
upright.

NOTES/TIPS

Barista note: Whip heavy cream with pistachio paste or syrup until thick but still pourable. The
cream should hold its layer on top without sinking into the mocha below.
Servetip: The pistachio green floating over the dark mocha base is your most
premium-looking serve. Display upright and do not shake — the two-tone gradient is
the whole show.
