Espresso Tonic

A sophisticated coffee lover's classic. Zest Specialty Coffee's bright and fruity African Mailman
concentrate poured over ice and effervescent tonic water, creating a stunning espresso-over
clear layer. Garnished with fresh lime and aromatic rosemary for a finish that is as elegant as it
looks.

INGREDIENTS
· Zest Specialty Coffee — African
Mailman Concentrate
· Tonic water
· Ice
· Fresh lime (garnish)


PREPARATION

1. Fill a chilled clear PET can with ice to
three-quarters full.
2. Pour tonic water slowly over the ice,
leaving space for the espresso layer.
3. Gently pour the African Mailman
concentrate over the back of a spoon to
float it on top.
4. Add a slice of fresh lime and a rosemary
sprig before sealing.
5. Seal and serve immediately upright to
preserve the layers.

NOTES/TIPS

Barista note: Pouring the concentrate slowly over a spoon is the key to achieving clean, distinct
layers. The denser espresso will settle below the tonic for a dramatic effect.
Servetip: Display upright — the espresso floating over the clear tonic is a head
turner. Do not shake. The bubbles and layering through the clear can do all the
selling for you.
